"Let thy food be thy medicine and medicine be thy food."
Every bite that we take we are either fueling disease or fighting it. I am a huge believer that our health strongly correlates with what we put into our body.
I have been off gluten for about sixteen years, but up until a couple years ago, I was a huge fan of counting calories and eating all low fat and “diet” foods. During that time I had low energy, stomach issues, and severe allergies. When I finally decided to eliminate processed foods from my diet and commit to eating whole organic foods the results were incredible. My energy levels increased, my stomach and allergies improved and I have stayed a consistent size without even trying.
It is important to note that our bodies digest processed and unprocessed foods differently. Our bodies were not created to break down synthetic chemicals. We are carbon beings after all. When we constantly expose ourselves to these processed foods, we are causing stress on our body which can lead to inflammation and disease, especially over a prolonged period of time. If clean eating seems a little overwhelming and you aren’t sure where to begin, use this as a rule of thumb next time that you shop. If 90% of the food you are buying does not wilt or expire within a week, it’s likely processed or modified and should be avoided.
I hope through my recipes and experiences I can help you begin to enjoy eating in a more nutritionally and wholesome way.
